Use the axe that you get on the first level to destroy crates and barrels. Don't fight enemies with it. Look for chests with magnesis on the levels with water. The best tactic for fighting the Hinox imo is to use Stasis and then shoot it in the eye. Once it sits down, spam Y. Repeat this process until it's dead. Use the updrafts in the first levels to your benefit. Shoot enemies with arrows. Be careful in the dark areas and don't just rush into enemies. Being sneaky is key. Also, it could be a good idea to have explored Typhlo Ruins before the Middle Trials as that will introduce this concept to you.
There are some Decayed Guardians in the Middle Trials, being able to shield parry their beams makes things a lot more easier. Make sure you know how to fight Guardian Scouts (the ones on shrines with "tests of strength") as multiple will appear in various levels. There is lightning and rain in the first levels, make sure you don't have metal weapons, bows, and shields equipped. Shoot the two Electric Keese with arrows.
In one of the resting areas you'll get 3 ancient arrows. DON'T WASTE THESE. I used mine on two Guardian Skywatchers and one on a Lynel. I'd suggest doing something similar. When fighting the Stalnox, use the same technique as for a Hinox. Pick up the elemental weapons that it drops and keep those for later.
